After testing more than 20 recipes, Chef Lisseth Campos created the final version of our unforgettable pollo en brasa. Every bite is designed to bring back that feeling of home, family, and the bold Venezuelan taste that inspires everything we serve.


Our rotisserie chicken in Doral reflects our Latino roots, our love for family-style meals, and our passion for real flavor. Un Pollo is our way of sharing authentic Venezuelan food in Miami with Hispanic families and with anyone looking to experience true Latin flavor in a warm, welcoming setting.

Lisseth Campos

(Chef & Co-Founder)

Lisseth has more than 18 years of experience in the food industry. She began at age 16 as a food runner, where she discovered her passion for cooking as both an art form and a way of storytelling. Over time, she became Executive Chef of a renowned restaurant in Fort Lauderdale, which was awarded “Best Italian Restaurant in Broward County” for two consecutive years.


After taking a break to start her family, she graduated with honors from Le Cordon Bleu. In 2018, with the support of her family, she founded Un Pollo, where she shares her culture, passion, and stories through Venezuelan comfort food with her own unique style. Since then, her talent and tenacity have brought families together through authentic, urban flavors full of identity.
